Master chocolatier
François Pralus, a renowned master chocolatier, expresses his passion for chocolate by ensuring that the authentic flavors of each cocoa bean are preserved. His unique approach therefore consists of not mixing beans from different origins, in order to allow gourmets to experience the rich and authentic nuances that are specific to each variety.
Thus, our passionate master chocolatier invites chocolate lovers to a real world tour of flavors. Thanks to a rigorous selection of the best beans in the world, particularly from South America, Maison Pralus offers a collection of 20 chocolate bars, each carrying the history and subtleties of its terroir.
The rich and varied range offers a dark chocolate with 75% cocoa, guaranteeing a perfect harmony between cocoa and cocoa butter. It is this carefully balanced composition that allows, among other things, to distinguish and appreciate the subtleties and nuances of beans from different origins. From Indonesia to Tanzania, via Venezuela and Colombia, each bar is an invitation to discover the unexpected and sometimes surprising flavors of distant lands.
Among the flagship creations, the Pyramide des Tropiques, launched in 2003, and the Barre Infernale, illustrate the passion and excellent work of François Pralus. These specialties, which you can find in Pralus boutiques, testify to the quality and innovation of Maison Pralus.
And a great pastry chef
Auguste Pralus, an emblematic figure of French pastry, left his mark on the culinary world with his talent and unique know-how. Distinguished by the title of Meilleur Ouvrier de France in 1955, he not only excelled in the art of pastry, but also contributed to enriching pastry through his professional commitment.
Successively holding the positions of president of the Syndicat des Pâtissiers, member of the Académie Culinaire de France, and honored with the titles of Chevalier des Arts, des Sciences et des Lettres as well as Chevalier de l'Ordre du Mérite National, Auguste Pralus devoted boundless passion and devotion to his profession.
His most famous creation, the Praluline©, invented in 1955, remains often imitated, but never equaled. This gourmet brioche with pink pralines has acquired a reputation that transcends borders, reflecting the excellence and authenticity of his know-how.
The city of Roanne, grateful for his legacy and his contribution to the influence of French gastronomy, paid tribute to him in 2017 by naming an esplanade in his name, thus anchoring his legend in the history of the city.

A great leader and a family around him
Maison Pralus, a true institution in the world of French chocolate, was born thanks to the initiative and talent of Auguste Pralus. The history of this house of artisan chocolatiers continues today with François, his son, who has taken up the family torch.
During his internship at Bernachon, he was struck by the idea of transforming cocoa beans directly into chocolate, a revelation that led him to become one of the few master chocolatiers in France to control the entire chocolate-making process, from bean to bar.
His passion for cocoa, born in the late seventies, has never left him and has even intensified over the years. Today, the Pralus family legacy continues with Hugo and Ulysse, who, having grown up in this gourmet universe, have naturally developed the same passion as their elders.
Together, they embody the very essence of artisan chocolatiers, pastry chefs and bakers. Dedicated to creating exceptional products, together, they demonstrate the family commitment to quality, innovation and the transmission of know-how that has characterized Maison Pralus since its founding.
