A New Expression of Madagascar Cocoa
Brut de Plantation continues Pralus’ exploration of single-origin cacaos, a journey that has been at the heart of the brand for several decades. This new chocolate bar combines 75% organic dark chocolate, made from beans grown in the Ambanja region, in the heart of the Sambirano Valley, with organic cocoa nibs from the same terroir. A meeting between the chocolate’s aromatic finesse and the natural crunch of the cocoa bean, offering a new way to discover Madagascar cocoa.
A Story of Terroirs and Single-Origin Cacaos
Since the 1990s, François Pralus has worked with single-origin cacaos, drawing inspiration from the world of wine: revealing, through chocolate, the uniqueness of a terroir and the distinctive character of each origin. Today, this approach is at the heart of Pralus’ expertise. The range includes 19 chocolate bars, most of them made with 75% dark chocolate from a single origin. It also includes a 100% Cacao bar, Mélissa 45% Milk Chocolate, as well as two blends: La Salsa 75% and Fortissima 80%. Brut de Plantation now continues this exploration of single-origin cacaos, with a new interpretation of Madagascar cocoa.
100% Criollo Cocoa from the Sambirano Valley
For this Madagascar origin, Pralus selected cocoa made exclusively from Criollo beans, a variety particularly valued for its aromatic finesse. Grown in the Ambanja region, in the heart of the Sambirano Valley, this cocoa reveals the rich aromatic character of Madagascar. Known for its fruity and tangy notes, it develops a refreshing character on the palate, with a subtle acidity and deep cocoa notes.
Cocoa Nibs: Another Expression of the Bean
The distinctive feature of Brut de Plantation lies in the addition of organic Madagascar cocoa nibs, sourced from the same origin as the cocoa used to make the chocolate bar. Made from roasted and crushed cocoa beans, the nibs bring a delicate crunch and enhance the expression of the cocoa.
The chocolate melts on the palate while the cocoa nibs extend the tasting experience, adding an extra textural dimension. A way to discover cocoa through two expressions: the full depth of dark chocolate and the natural crunch of the bean.
