This dark chocolate is one of François Pralus' first recipes and one of his rare blends. It is made of 80% chocolate, a high percentage that gives it its name. The master chocolatier wanted a powerful chocolate and selected beans with an aromatic character, each with its own identity and qualities. Criollo, Forastero and Trinitario for cocoa, sour and slightly smoky hints.
Types of beans: Trinitario, Forastero and Criollo.
Chocolate 80% (cocoa, sugar, pure cocoa butter, sunflower lecithin).
Keep in a dry and cool place between 16 and 18° C.
